So here I'm going to show you how to make my favorite Tomato & Basil Soup!
Me and my family were chinese.My dad and mom not a big fans of western foods.
I made this soup and let them tried.They loves it so much.
So please give it a try!
As I called it diet soup!
You should NOT put lots of salt and sugar in it (Cos its bad for your diet), but you can always put spice in it.Make it much more flavorful.
I know sometimes diet foods was quite boring.
But this soup is perfect for everyone and so flavorful!
I mean it just a normal tomato & basil soup.
Only much special for people who are dieting!(on not adding any salt and sugar!)
This soup is super healthy.
**very very easy to make!**
If you are not dieting,of course you can add more salt and sugar in it.
But trust me!!! There is not need to! Just follow my recipe and see how it turns out!
Tomato & Basil Soup Recipe
*You can add as much or as little of the vegetables you want.
Ingredients:
1 Onion (Chopped into little pieces)
2-3 slices of celery (Chopped into little pieces)
2-3 Carrots (Chopped into little pieces)
6-7 peeled and chopped large tomato OR use one canned 400g of peeled plum tomato
(I prefer use 6-7 tomato , peeled them by yourself.why?Cos canned stuffs have lots of sodium that was bad for health.
**Cut a " X " on you tomato, boil for 2 mins in boiling water.It will be easier to remove the skin!**)
2-3 Large tomato (peeled or not is optional . I do peel them)
1-2 cups Vegetable stock(/Chicken stock / beef stock)
3-4 cups Water
15-20 leafs Fresh basil
Dried basil (optional, I prefer add)
1-2tbsp olive oil
Salt and pepper
(For diet people, DO NOT add salt,The stock already have salt!)
1) In a large deep pot , add olive oil and chopped onion, carrots , celery.Cook for 10 mins.
2) Add all of your tomato, mash them a bit then pour the vegetable stock and water in.Cook till boiled.
3) Add all your basil ,spices , pepper and (salt) ,cook for another 2mins.
4) Puree the mixture.
Use any kind of blender , puree food machine puree the mixture.
*If you like soup a bit chunky, only puree half of the mixture.*
DONE! Enjoy! How easy was that?
This time I also add white mushrooms after I puree the soup.
DELICIOUS!!
Serve with whole wheat bread!
Here is the only brand of vegetable broth that I will use!
I'm not a fans of organic food.I only care of the ingredients.
So this one is a healthy choice!
Only 22kcal ,1.2 sugar and 140 sodium(Sea salt) Per 240ml.
Free recipe,haven't try it yet!
They also have different kinds of broth and soup!
