17. Raisin With Walnut Cupcake




  

                                        Ingredients:    (6 large cupcake, eight small cupcake)

1cup  Plain flour
100g  Unsalted butter
2  Eggs
95g  Sugar( I use 85g brown sugar and 10g white sugar)
1tsp  Vanilla essence
1/2tsp  Baking powder
1/2tsp  Salt
120-150g  raisins and walnuts(u can add any kind of dry fruits u like=))
1-2tbsp  Cinnamon powder(optional)

1) Put one cup of water into the raisins and let it set for 10-15mins then .(You can skip this step but i like soft raisin in my cupcake =) )
2) Drain the water of the raisin.and cut the walnuts into little pieces.
3) Cream the butter with the sugar then add the eggs(one at a time).
4) Add the vanilla essence and cinnamon powder and mix well.
5) Pour in the flour and mix until they are just combined.
6) Gently fold-in the raisins and walnuts .
7) place them into the cup cake tin then bake at 200C for 20-25mins.

You can also add in any kind of dried fruits that u like.
