11. Meringue Frosting or Topping

             
                                                                     Ingrdients:

 Meringue :
1  Egg white
10g  Sugar
1tsp  Lemon juice

Sugar mixture:
25g  Water
80g  Sugar

Others:
125g Butter (at room temperature!!)
25g  Strawberry jam
25g  Melted chocolate
(You can use any flavor of powder e.g.coco powder  or jam that you like!!)

1) Whisk the egg whit and lemon juice until it turns white.
2) Slowly add in 10g sugar into the egg white mixture and whisk until the egg white stick to your whisk.
3) Add 25g water and 80g sugar into the sauce pan and cook until it becomes thicken then SLOWLY pour it into the egg white mixture.(Make sure you add the sugar mixture while your electric mixer is on!!)
4) Whisk in the butter(at room temperature!!) into the egg white mixture.
5)  After the mixture have been cool down a bit, fold-in any kind of jam or powder that you like.(I'm using strawberry jam and melted chocolate.)

This meringue frosting is great for french macaroons and cup cakes topping ,
you can add in any kind of jam or powder to make different taste of frosting that you like.
You may also add fruit coloring to make different colors for decoration.
