7. Lemon Meringue Pie





                                                         
                                               Ingredients:
Pie crust:
1 and 1/2 cups plain flour
3 teaspoons icing sugar
140g butter
1 egg yolk
2 tbs water

Lemon curd:

1lemon rind
150g  sugar
100g butter
1 tsp corn flour

Meringue topping:
3 egg white 
20g sugar


Pie crust:
1)  Mix all the ingredients until it becomes a dough.(Do not knead!)
2)  Place the dough in to the fridge for at least 30 mins.
3)  Roll out the dough and place it into the cake tin.
4) Baked at 200C for 20-30 mins.

Lemon curd:
1)  Add all the ingredients to a sauce pan and cooking them until the mixture becomes thicken then pour the lemon curd into the cake tin.

Meringue topping:
1)  Whisk the egg whites and sugar until stiff and glossy then pour it on top of the cake.
2)  Use a really hot gill or a torch to caramelize the sugar until it turns golden brown.

This lemon meringue pie seems a lot of ingredients but they are easy to make in each step.
I found that usually when I bake pies,will left some pie crust or other ingredients.And as this recipes I'm going to show you how to use them to make some simple desserts on my next video.
