14. Blueberry Cupcake










                                                                                Ingredients:    ( 6  Large cupcake or 8 small cupcake )

1cup  Plain flour
100g  Unsalted butter
2  Eggs
95g  Sugar( I use 85g brown sugar and 10g white sugar)
1tsp  Vanilla essence
1/2tsp  Baking powder
1/2tsp  Salt
120-150g  Blueberries
1-2tbsp  Cinnamon powder(optional)


1)  Mix flour ,salt,baking powder in a big bowl.
2)  Add 5tbsp  of the flour mixture to the blueberries then gently mix until combined.
3)  Cream the butter then whisk in the sugar,then whisk in eggs(one at a time).(You can use stand mixer,hand mixer or do it by hand with the ballon whisk!)
4)  Whisk in the flour mixture to the butter and sugar mixture.
5)  Gently fold-in the blueberry mixture into the batter.
6)  Place in the paper cupcake tin into your cake pan then place in the batter.
7)  Bake at 200C for 25-30mins.

This cupcake is very soft and light ,the sourness and sweetness of the blueberries makes a very awesome combination with the cake mixture.
Is not too sweet and not too sour.
The baked blueberries becomes very juicy and give a more soft texture to the cupcake.
I bake at 200C for 10-15mins before every time I serve them,
they cames out just at they have been baked at the frist time.
Why not make some for yourself a breakfast?Lunch?Tea Time with coffee or Tea?=D
